Gortnamona is a soft, mould-ripened goat’s cheese handmade by the Maher family at Cooleeney Farm in Co. Tipperary, using local goat’s milk from a nearby herd. Beneath its snowy-white bloomy rind lies a chalky, creamy paste that becomes richer towards the edge, with a mild, mushroomy and delicately goaty flavour reminiscent of a classic Brie. Fourth-generation farmhouse cheesemakers since 1986, Cooleeney brings the same expertise from their award-winning cow’s milk cheeses to this distinctive goat’s cheese. Best enjoyed at room temperature with a glass of Sauvignon Blanc or unoaked Chardonnay.
