This Durrus Mini is a small-format version of one of Ireland’s pioneering farmhouse cheeses, handmade by Jeffa Gill (now joined by daughter Sarah) at their hillside farm in Coomkeen, West Cork, since 1979. A semi-soft, washed-rind cheese made from local cow’s milk, it develops a mottled pink-orange rind and a moist, elastic paste with earthy, savoury notes and a hint of sweet milk beneath a mild, buttery character. Aged a minimum of three weeks, this mini format is ideal for smaller boards or households, best served at room temperature with a glass of Pinot Gris or a medium-bodied red.
