KanonKop, nestled among the picturesque hills of Stellenbosch, is one of South Africa’s most renowned estates. It began estate-bottling its first wines in 1973 yet had been providing grapes to the local cooperative for many decades prior. Their moniker, KanonKop, originates from a hillock on the Simonsberg mountain overlooking the vineyard. Centuries ago, a cannon would sound from the hill to announce the arrival of ships into Table Bay, alerting farmers to start the 50km journey to the harbour and exchange their produce for goods.
Tasting Note: Bright deep ruby red colour. The nose shows cassis, raspberries, cherries, black plums, cinnamon, allspice and a hint of chocolate. The palate is lively and fresh, with succulent summer berry flavours. The fruit is supported by a firm, yet silky tannin structure. Savoury notes persist on the lengthy finish.

Vinification: Fermentation took place in open top concrete fermenters at 28°C. The floating skins were punched down mechanically every 2 hours during fermentation. The juice was drawn off the skins after 3 – 5 days. After malolactic fermentation the wine was matured for 12 months in older 225L French Nevers oak barrels.
