A bold, innovative Irish fortified apple wine that drinks with the complexity of a fine tawny port. It displays a “foxy-gold” or deep amber colour and offers a rich nose of apple jam, brandy, and warming winter spices. The palate is velvety and indulgent, revealing layers of marzipan, kumquat, and toffee, balanced by a long, elegant, and surprisingly dry finish.

Style: Fortified Apple Wine / Vin de Liqueur.

Grapes: None. It is crafted using the juice of bittersweet apples from Killahora’s 200-year-old orchards.

Fermentation: Unlike the Ice Wine, which is fermented from frozen juice, Pom’O is created by mixing fresh, unfermented bittersweet apple juice with fine apple brandy. This “mutes” the juice (stopping any fermentation) and preserves the natural sugars and pure fruit character of the apples.

Ageing & Filtration: The blend is aged for at least 12 to 15 months in Irish Whiskey barrels (often sourced from the Roe & Co. distillery). This maturation introduces notes of vanilla, tobacco, and soft oak spice. It is lightly filtered before bottling to maintain its rich, unctuous texture.

Alcohol: 17%

Farming: Sustainable and artisanal. The estate focuses on minimal intervention and the preservation of rare, heritage apple varieties.

Allergens: Contains sulphites

Pairing Suggestion: A superb partner for strong, nutty cheeses like a mature Cheddar or a vintage Gouda. It also complements fruit-based desserts like Christmas pudding, apple tart, or a simple plate of toasted walnuts and dried figs.
