Junipers grow on bushes that mature over 2 summers. Use of juniper berries is rife in almost all game dishes and it is a favourite spice of Schnapps-makers. Juniper is also used in many meat and vegetable dishes and stews to give a deeper, more tart flavour.

Juniper berries can be crushed easily before use to derive maximum flavour.
