Tasting Note:  Straw yellow colour. Fine and persistent bubbles. Very creamy on the palate, broad, complex, with a lot of structure and persistent mousse. Good acidity. Quince and green apple, touch of grapefruit, toasty Champagne-like character. 

Pairing suggestion: Perfect as an aperitif or served with canapés.
