On the nose grapefruit, cranberries, apple and lime with hints of herbs and elderberry. On the palate crisp acidity, full-bodied, good minerality with green apple, citrus and cranberries.

Style: Dry, light-to-medium-bodied white wine.

Grapes: 100% Sauvignon Blanc

Fermentation: Spontaneous fermentation using indigenous yeasts. Unlike the estate’s higher-tier wines, this is fermented entirely in temperature-controlled stainless steel tanks to maintain maximum freshness and purity of fruit.

Filtration: Minimal intervention; the wine is typically bottled with very light filtration and no fining agents (vegan-friendly).

Alcohol: 12% – 12.5%

Farming: Practising Organic and Biodynamic. The estate uses no herbicides, insecticides, or synthetic fertilisers, and employs high-density planting to force roots deep into the sandstone and limestone soils.

Allergens: Contains sulphites.

Pairing Suggestion: Excellent with green asparagus, goat’s cheese salads, or spicy Asian fusion dishes. Its high acidity also makes it a brilliant partner for shellfish and light pasta dishes with lemon-based sauces.
