A sophisticated, high-altitude Chardonnay that balances power with restraint. It is bright and energetic, offering a complex nose of lemon pith, white nectarine, and grapefruit with subtle notes of ginger snap and cashew. The palate is precise and textured, showing remarkable tension and a long, saline finish.
Region: Adelaide Hills, South Australia.
Vintage: 2023.
Style: Dry White Wine
Grapes: 100% Chardonnay (sourced from the Piccadilly, Lobethal, and Lenswood vineyards).
Fermentation: Hand-picked grapes were chilled and whole-bunch pressed. The juice underwent fermentation in a combination of new and used French oak barriques and puncheons using both indigenous and selected yeasts.
Filtration: The wine underwent partial malolactic fermentation and was matured on lees for 9 months with regular stirring (battonage) before being blended and lightly filtered prior to bottling.
Alcohol: 12.5%.
Farming: Sustainable viticulture; Shaw & Smith focus on soil health and low yields, moving towards organic practices across their estate vineyards.
Allergens: Contains sulphites; may contain traces of milk or egg (used as traditional fining agents).
Pairing Suggestion: Ideally suited to herb-roasted poultry, grilled sea bass with caper butter, or a creamy white fish risotto.
