A vibrant, mineral-driven white wine that captures the “stony” essence of the Penedès terroir. It is fresh and saline, characterized by high acidity and a lean, electric mouthfeel with notes of citrus, wild herbs, and white fruit.
Region: D.O. Penedès (Catalonia, Spain).
Vintage: 2023.
Style: Dry White Wine
Grapes: Xarel·lo (75%) and Malvasía de Sitges (25%)
Fermentation: Spontaneous fermentation using indigenous yeasts. For 2023, the grapes were harvested early and pressed gently (mostly free-run juice) to preserve freshness. Fermented in 100-year-old underground concrete tanks.
Filtration: No fining and no filtration (or very minimal) to preserve the wine’s natural texture and character.
Alcohol: 12.5%.
Farming: Certified Organic and practicing Biodynamic. The estate uses “non-plowing” techniques to protect soil microbiology and relies on dry farming.
Allergens: Contains sulphites
Pairing Suggestion: Excellent with Mediterranean seafood like grilled sardines or sea bass ceviche. It also pairs beautifully with spring vegetable risotto, fresh goat cheese, and light poultry dishes.
