While the flagship Mas de Daumas Gassac wines are known as the “Grand Crus of the Midi,” the Moulin de Gassac range was created to preserve small, high-quality family plots in the Languedoc. The Sauvignon Blanc is grown near the Thau Lagoon, where the maritime influence and cooling sea breezes prevent the grapes from becoming too heavy, maintaining a “crunchy” acidity that is rare for such a warm region.
Tasting Note: Light, dry, crisp sauvignon blanc from the Languedoc. Typical pale gold colour, with an expressive, open nose of citrus and grassy hints. Ideal with fresh fish or young goat’s cheese.

Vinification: Fermentation takes place in temperature-controlled stainless steel tanks. The wine is then aged on its fine lees for 5 to 6 months in tank—avoiding any oak contact—to ensure the final product is pure, vibrant, and incredibly fresh.
