Tasting Note: Menaje Verdejo has a pale straw yellow in the glass with aromas of citrus peel, freshly cut hay, white and yellow flowers, fennel, and boxwood. Round on the palate, with pronounced acidity. Ripe fruits stand out, along with quince and a saline background that adds tension.
Pairing suggestion: White fish, chicken, fresh goats cheese.

Grapes: Verdejo
Vinification: The grapes come from different plots with clay-limestone soils and boulders in the Rueda area, which are processed separately. The vines are more than 30 years old. Natural yeast fermentation is used to achieve the maximum expression of the environment. The wine ferments in stainless steel tanks at a controlled temperature of 18-22ºC. Subsequent ageing of the wine is on its lees for a controlled period of time.
