The Ilimitado Branco – is a field blend of indigenous Portuguese varieties Rabigato, Codega, Gouveiu and Viosinho –  it has medium body with a hint of stone fruit but with a saline edge. A vibrant, wine with wonderful complexity for this price point.  A great way to start the evening.
Region: Douro (Cima Corgo), Portugal.
Vintage: 2024.
Style: Dry, mineral-driven White Wine.
Grapes: A traditional field blend of 60% Rabigato, 15% Gouveio, 15% Códega, and 10% Viosinho.
Fermentation: Hand-harvested and whole-bunch pressed. Fermentation is conducted with indigenous yeasts; 90% is fermented in used French oak barrels (228L and 500L), while the remaining 10% is fermented in stainless steel to preserve primary fruit lift.
Filtration: Aged for 9 to 12 months on fine lees without stirring (battonage) to enhance texture without adding “fatness.” It undergoes minimal fining and very light filtration to ensure it remains a “living” wine.
Alcohol: 12.5%.
Farming: Practising Organic and Sustainable. The fruit comes from 30–60 year-old vines planted in mica schist at high altitudes (500–600m).
Allergens: Contains sulphites.
Pairing Suggestion: Ideally paired with grilled white fish like sea bass or cod, octopus à lagareiro, or crispy fried mackerel with tomato rice. Its acidity also cuts through roast poultry and spicy seafood dishes exceptionally well.
