Details
A smooth, fresh, and harmoniously balanced Cava with a creamy texture. It displays a pale straw-yellow colour with light golden glints and a persistent crown of fine bubbles. The nose is invitingly fruity, led by notes of green apple, ripe pear, and white florals, while the palate is lively and crisp with a subtle, toasty finish from its time on the lees.
Region: D.O. Cava (Penedès), Catalonia, Spain.
Vintage: Non-Vintage (NV).
Style: Dry (Brut), light-to-medium-bodied Sparkling Wine.
Grapes: A classic Cava blend of 33% Macabeo, 33% Xarel·lo, and 33% Parellada. The grapes are sourced from the La Llebre vineyard, where the 25-year-old vines grow in clay-rich soils.
Fermentation: Produced using the “Método Tradicional“ (Champagne method). Following a manual harvest and gentle pressing, the second fermentation takes place inside the bottle.
Ageing: The wine is aged on its lees in the bottle for a minimum of 9 months, which develops its signature creamy mouthfeel and delicate autolytic (yeasty) notes.
Alcohol: 12%.
Farming: Vegan-friendly. The winery uses plant-based alternatives for clarification (fining) rather than animal products like gelatin or egg whites.
Allergens: Contains sulphites.
Pairing Suggestion: A quintessential aperitif. It pairs beautifully with classic Spanish tapas, such as jamón ibérico, salted almonds, or seafood like grilled prawns and calamari. It is also excellent with light poultry dishes, sushi, or creamy pasta
