A “living” Champagne that is pure, energetic, and unapologetically raw. It displays a bright golden hue with a fine, persistent mousse. The nose is a striking mix of crunchy green apple, citrus zest, and pastry notes, while the palate is vinous and structured with a saline, chalky finish. Because it is made without added sulphur, it possesses a unique “appley” freshness and a creamy, lactic texture often described as glou-glou (highly drinkable).
Region: AOC Champagne (Chavot-Courcourt, Coteaux Sud d’Épernay), France.
Vintage: Non-Vintage (NV). However, Chavost typically bases each release on a single year; current releases are often based on the 2022 or 2023 harvests (disgorged in 2024/2025).
Style: Dry (Brut Nature), medium-bodied Sparkling Wine.
Grapes: A balanced blend of 50% Chardonnay and 50% Pinot Meunier. It is made exclusively from the cuvée (the first, highest-quality pressing of the juice).
Fermentation: 100% spontaneous fermentation using indigenous yeasts in thermo-regulated stainless steel vats. It undergoes full, natural malolactic fermentation. No chaptalisation (adding sugar to the must), no enzymes, and no tannins are used during the process.
Filtration: The wine is neither fined nor filtered before bottling to preserve its aromatic complexity and natural texture.
Alcohol: 12.5%.
Farming: Certified Organic (as of 2023). The vineyards are located on north-facing clay-limestone and chalk soils, which help maintain the high acidity essential for sulphur-free winemaking.
