A sophisticated, structured, and deeply aromatic rosé Champagne. It displays a beautiful bronze-tinted salmon hue and opens with a noble bouquet of redcurrants, cherries, and wild strawberries, accented by spicy notes of toast and smoke. The palate is a masterclass in balance, combining the vivacity of fresh berries with a firm, vinous backbone and a delicate tannic grip on the finish.
Region: AOC Champagne (Aÿ), France.
Vintage: Non-Vintage (NV). The current 2026 releases are typically based on a majority of the 2021 harvest, blended with a high proportion of aged reserve wines.
Style: Full-bodied, dry, and vinous Sparkling Rosé.
Grapes: A blend of 62% Pinot Noir, 24% Chardonnay, and 14% Pinot Meunier. The final assembly includes 5% to 6% still red wine, sourced from the estate’s Grand Cru plots in Aÿ and Verzenay (including the legendary Côte aux Enfants).
Fermentation: Following the Bollinger tradition, roughly 30% of the base wines are vinified in old oak barrels. This micro-oxygenation develops the wine’s characteristic roundness and complex textural layers.
Filtration: The wine is cellar-aged for a minimum of 3 years, double the legal requirement. It is disgorged with a moderate dosage of 7–8 grams per litre to maintain its racy acidity and mineral tension.
Alcohol: 12% – 12.5%.
Farming: Sustainable viticulture (the first House to be certified HVE). Over 85% of the grapes are sourced from Grand and Premier Cru villages, with Bollinger owning nearly two-thirds of the vines required for their production.
Allergens: Contains sulphites.
Pairing Suggestion: Thanks to its structure, this is an incredibly versatile food wine. It is exceptional with lobster, seared salmon, or duck breast. It also pairs brilliantly with subtle Asian cuisine, such as tuna sashimi, or as a sophisticated accompaniment to an afternoon tea featuring tart red-berry desserts.
