The 2023 Combel-La-Serre “Le Pur Fruit du Causse” is the ultimate “vin de soif” (wine for thirst) from the Cahors region. Crafted by Julien and Sophie Ilbert, this wine seeks to redefine Malbec by stripping away the heavy oak and tough tannins traditionally associated with the area, focusing instead on pure, juicy drinkability.

Tasting Note: Light, fruit-forward organic Malbec from Cahors. Hand harvested, with partial whole-cluster pressing, fermentation at cool temperatures with indigenous yeasts. A mouthfull of summerfruit. Serve slightly chilled.

Vinification: Fermentation occurs with indigenous yeasts in temperature-controlled cement and stainless steel tanks. The wine is aged on its fine lees in cement through the winter and bottled unfiltered in the spring to lock in the “Pur Fruit” character. No oak is used at any stage.
