A sophisticated and bone-dry traditional mead that drinks like a fine white wine. It features an enticing citrus-forward profile with notes of orange blossom, honeyed minerals, and a hint of crisp green apple. It is light-bodied and bracingly fresh, finishing with a delicate, lingering floral nectar.

Honey Source: Raw Spanish Orange Blossom Honey from southern Spain, chosen to reflect the historic maritime trade routes between Kinsale and Spain.
Production Process: Fermented using a blend of old recipes and modern winemaking techniques. The honey is mixed with local water from Innishannon and fermented to “wine strength” (12% ABV) using specifically selected yeasts. It is matured in stainless steel tanks for several months to allow the floral aromatics to integrate.
Filtration: The mead undergoes sterile filtration to ensure a crystal-clear appearance and a polished mouthfeel.
Alcohol: 12%.
Sustainability & Dietary: Naturally Gluten-Free. The meadery is family-run and focuses on sustainable sourcing and plastic-free packaging.
