Brilliant mahogany lights up the glass and prepares you for an alluring toasted hazelnut aroma. Made from 100% Palomino aged for 12 years in bota, this is a very silky and fine Oloroso with a luscious feel in the mouth. Orange peel gives a pronounced freshness to complement a backbone of brooding, nutty flavours. On the end the solera comes to the fore leaving a vanilla and cigar box finish which is persistent and long.

Vinification: Oloroso is typically made from 100% Palomino grapes, often from the heavier press juice which has more body and is suitable for oxidative aging. After fermentation, the base wine is fortified with a neutral grape spirit to a minimum of 17% alcohol by volume (ABV), a level at which flor yeast cannot survive. Without the protective flor layer, the wine is intentionally exposed to oxygen through the slightly porous American oak casks (botas) in a solera system in Bodegas Garcia Jarana. This prolonged exposure (the Diatomists Oloroso is aged for 12 years) causes the wine to darken in colour and develop rich, complex, nutty, and savoury flavours, along with notes of dried fruit and spice.
