A powerful, sophisticated, and deeply structured Champagne that stands in a category of its own. It offers a beautiful aromatic complexity of roasted apples, peach compote, and spicy nuances. On the palate, it strikes a masterly balance between firm structure and vivacity, featuring a velvet-like mousse and lingering notes of fresh walnut, toasted brioche, and ripe orchard fruit.

Region: AOC Champagne (Aÿ), France.

Vintage: Non-Vintage (NV).

Style: Full-bodied, dry, and complex Sparkling Wine.

Grapes: A Pinot-dominated blend consisting of 60% Pinot Noir, 25% Chardonnay, and 15% Pinot Meunier. Over 85% of the grapes are sourced from Grand Cru and Premier Cru villages.

Fermentation: Unique among major houses, roughly 30% of the blend is vinified in old oak barrels (some up to 40 years old), which adds an inimitable silkiness and micro-oxygenation to the wine. It undergoes full malolactic fermentation to enhance its creamy texture.

Filtration: The wine is cellar-aged for at least 3 to 4 years—more than twice the legal requirement—and undergoes traditional riddling and disgorgement with a moderate dosage of 7–8 grams per litre.

Alcohol: 12% – 12.5%.

Farming: Sustainable viticulture (certified HVE – High Environmental Value). Bollinger is one of the few houses to produce the majority of its own grapes (60%) from its 178 hectares of estate vineyards.

Allergens: Contains sulphites.

Pairing Suggestion: This is a “gastronomic” Champagne. While it is a perfect aperitif, it truly shines with grilled lobster, seared scallops, or sushi. It also has the weight to stand up to white meats (like roast chicken with truffles) and aged hard cheeses like 24-month Comté or Parmigiano-Reggiano.
