Reared in small numbers by the Moffit family, in Blacklion, Co. Cavan, Thornhill Farm ducks are an Aylesbury-Pekin cross breed. The dedicated attention to detail of the small-scale farming and the careful selection of breed result in a perfectly balanced bird, with just the right amount of gorgeous duck fat and generous sized breast meat. Remember to keep any excess fat for roast potatoes!
