To mark twenty years of Fallon & Byrne, we’re opening The Wine Cellar to an evening of serious cheese, serious wine, and one rather large wheel of extremely rare Parmesan.

Join us for for an intimate and extra special tasting led by two of our most valued suppliers: Sheridans Cheesemongers and Valsana. Together they’ll guide you through six cheeses paired with six wines. This night is shaped by their own long standing friendship and shared obsession for exceptional quality.

For some theatre, we’ll be opening a whole wheel of the very rare Vacche Brune Parmigiano Reggiano, made from the milk of a rare local brown breed and almost never seen in Ireland. We’ll crack it open in front of you, because a wheel this unusual deserves an audience!

You’ll also taste your way through standouts like Killeen Goat, Durrus, aged Mount Leinster Cheddar and a creamy Gorgonzola, matched to wines including a Chavost Champagne, Monteraponi Rosato and a Moscato d’Asti to finish. To top off this special event, there will be charcuterie for every guest from our own Foodhall charcuterie counter.

With only 28 seats in The Wine Cellar, this is a rare evening, so book early to avoid missing out.
