It derives from the muscular portion of the pig’s neck and the meat is of 100% Italian origin. The dry salting phase involves the use of spices and herbs which give this cured meat a delicate and enveloping flavor with an unmistakable aroma during the aging. It is highly recommended for its sweetness. It is excellent as an aperitif and also ideal during meals accompanied by warm bread and vegetable paté and goes perfectly with a good white wine such as Franciacorta and Prosecco.
