Tasting Note: Wonderful bone-dry bubbly. Brilliant pale straw. Self-proclaimed as the oldest Brut in the world is declared on the label. The lees ageing has imparted this beautiful crisp wine with apple brioche notes and zesty citrus.

Pairing suggestion: The Grande Cuvée 1531 is an excellent aperitif. It also goes well with hors d’oeuvres or desserts, such as créme brûlée.

Grapes: Chardonnay, Pinot Noir, and Chenin Blanc

Vinification: The grapes are harvested earlier than the grapes of the still wines to ensure a steadfast acid structure. The base wines are then fermented a second time according to the “Méthode traditionelle” – i.e. in classic bottle fermentation. The Grande Cuvée 1531 is then left on its lees for 12 months.
